Healthy Muffin Recipe Ingredients
3 Cups Oatmeal
2 Scoops of protein powder
1 Cup Stevia
1-1/2 Cups of water
2 Egg whites
2 tsp. Cinnamon (or pumpkin spice, apple spice etc.)
Vanilla extract or any other flavoring you prefer, including sugar free coffee syrup, sugar free pudding mix etc.
1 tsp. Salt
2 tsp. Baking Powder
Healthy Muscle Muffin Instructions
Pre-heat oven to 350 degrees.
In a small bowl, first combine water, protein powder, eggbeaters and cinnamon.
Then, in a large mixing bowl, combine oatmeal, stevia, salt and baking powder. Pour small bow of water, protein powder, egg beaters and cinnamon into the large mixing bowl and mix thoroughly.
Spray traditional muffin tin with non-stick spray or coconut oil.
Pour ingredients into each muffin drop.
Cook at 350 degrees for 20 minutes.
While muffins are always best warm, you can place in Ziploc bags and refrigerate if you’d like to preserve them for your weekly meal prep.
